O gee..did I ever tell you that dessert {especially chocolate anything} makes me incandescently happy? This sounds right out of “Pride and Prejudice“. Oh Darcy!! Love that movie!! Are you in for a very decadent, rich dessert? These Oreo Mint Mississippi Mud Brownies are a Chocoholic’s Dream! I should know..{Ahem}…My name is Kim and ‘I’m a Chocoholic’…and damn proud of it!

So to those that don’t know what Mississippi Mud Brownies are…they are moistest, fudgiest, marshmallow-topped brownies that will rock your world! (add pecans if you want). I kind of did a twist on this recipe and added in some Mint Oreos, which I had in the cupboard patiently waiting to be used or else be devoured right out of the box. Did both! Go Figure!

These are pretty easy to make. *BONUS* I’m a sucker for marshmallow anything, and with those mint oreos and some chocolate chips tucked in between…O yes! Foodgasm?! {I did not just say that!!} When you add in those rich, thick brownies covered with ooey, gooey, fudgy frosting …O.M.G.!! Mercy me!

One thing I was really going after, was the Oreo mint cookies to permeate mint throughout the whole dessert. Accomplished!! I used a 9 x 9 pan and got 12 huge thick servings. Because these are so rich, I ended up even halving these to get 24. Of course, that meant we could have more, ya know…smaller servings! Worked out perfect for the weekend with kids in and out! This recipe was adapted from Oh Sweet Basil‘s divine Thin Mint Mississippi Mud Brownie recipe. Pretty fantastic!

- 1 (19.95 oz.) package Chewy Fudge Brownie Mix (Duncan Hines)
- 2 large eggs
- ⅓ cup water
- ⅓ cup melted butter
- 2 1/2 cups mini marshmallows (I didn't have mini's, so I had to cut my large marshmallows in quarters.)
- 1/3 cup milk chocolate chips (or semi-sweet)
- 25 Oreo mint cookies (lightly crush 20 for middle layer, moderately crush 5 for top layer and keep separate)
- 3/4 cup of unsalted butter, softened (if using salted butter, omit salt for frosting)
- 1/2 cup of cocoa powder
- 2 cups powdered sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 1 tablespoon milk, use more if needed
- Preheat oven to 350°F. Grease bottom of 9"x9" or 9"x13"
- Combine brownie mix, eggs, water and melted butter in large bowl.
- Stir with spoon until well blended, about 50 strokes.
- Spread in pan. Bake for 25-30 minutes and take out of oven 5 minutes before completely done. (Time is approx. 5 minutes less if you are using 9"x13" pan.)
- Sprinkle top of brownies with (20) lightly crushed Oreo mints, chocolate chips and marshmallows and place back in the oven for an additional 3-5 minutes.
- Remove from the oven and allow to cool for 10 minutes.
- Place the butter in a bowl and using a mixer or hand mixer, beat until smooth.
- Add the cocoa, salt and vanilla and continue mixing.
- After incorporated, start adding the powdered sugar and slowly begin mixing and add in milk as needed.
- Frost brownies and add the 5 crushed cookie mixture on top.
- Cut and serve. Store with tin foil cover or place in plastic tupperware after cutting into servings.
- Important! If you wait significantly after the 10 minutes, while the brownies are cooling, it makes it harder to frost. Lesson learned! :)
